(I'll talk about this below when discussion Collections.) In Calibre's driver plugin settings for whichever Kobo driver you're using, there is a tab named “Metadata, on device & advanced” which has a whole suite of options related to allowing Calibre to update metadata on the device. Unfortunately there is no way to browse by tag metadata on the Kobo… kind of. If you are talking about using the Kobo interface itself to explore books by series, yes, the My Books section has a Series tab which automatically populates from the series metadata. (Note that ondevice:true will only work while the device is connected.) However, for the books that exist both on your device and in Calibre's library, you can switch to Library view and search for, e.g., ondevice:true and tag:fiction and series:discworld (matches are case-insensitive by default). The information is visible in the Book Details panel but not in the main tabular interface, and using the search bar does not turn up matching results.

However, for my part, I disabled the KoboTouch driver in favour of the KoboTouchExtended driver (which is more full-featured).
